Hi allI read a post from a grower in the US who says Edamame translates to "beans on branches". They are harvested while still green/immature, the leaves are stripped off and they're sold in bunches still connected to the stems. A sprouting book I have said they were developed in the US.

Edamame is the name for young soy beans prepared in a certain way (boiled in salted water). In other words, it's the name of a dish. There are varieties of soy bean that have been developed/selected specifically for making edamame, such as Butterbean and Envy and the name of the dish is now often used to refer to them. So when someone is offering edamame seeds, they are in fact offering soy beans that are suitable for making edamame.Ray On 5/27/08, Terry Frewin <terryf@activ8.net.au> wrote:thanks, interesting - so Edamame is another varietal name like Butterbean or Envy?terry ----- Original Message ----- From: Ray South To: Growing our Groups Sent: Tuesday, May 27, 2008 6:20 AM Subject: Re: [Localseed-discuss] (no subject) Hello,Edamame are young (immature) soy beans picked for cooking (boiling in salted water usually) in their pods. The pods themselves are not eaten, just the beans. They are well known in China & Japan and varieties of soy bean, such as Butterbean and Envy, have been selected specifically for this purpose. That's about all I know. Perhaps Annie could add more.
