Hello, Edamame are young (immature) soy beans picked for
cooking (boiling in salted water usually) in their pods. The pods themselves
are not eaten, just the beans. They are well known in China & Japan and
varieties of soy bean, such as Butterbean and Envy, have been selected
specifically for this purpose. That's about all I know. Perhaps Annie could
